So this simple to make spicy soup is ready in under half an hour and only takes 10 minute of preparation time! What’s not to love? I found this soup warm and comforting and also rather light which is fab as this is a soup that could therefore be consumed in the summer months and isn’t even cold! Result! I have a thing about cold soup or gazpacho or whatever called! its cold. Yuck! It is also gluten and vegan free for those that require that or simply want a delicious soup.

The Carrots provide over 200% of your recommended vitamin A allowance. Carrots also contain fibre, vitamin K, potassium, folate, manganese, phosphorous, magnesium, vitamin E and zinc so brilliant for the body! Wahoo cos there are quite a few in this soup!

Lentils are almost fat free and again provide  fibre and also is a source of protein with each portion of soup providing 9.5g

Anyway without further a do I will get on to the recipe

Ingredients

Carrots 500g

Red Split Lentils 125g

Coconut Milk Can 400g

Vegetable stock of choice (I used Knorr stock pot Ensure your’s is vegan friendly if you require)

Herb Infusion pot (optional)

Chilli Flakes 2 tsp

Cumin (ground or seeds) 1 tsp

Method

Although you don’t have to soak the lentils I did for 10 minutes and then rinsed them before I added them to the soup. While the lentils soaked I washed and grated the carrots. There is no need to peel just make sure you scrub them before you grate.

Once that is done prepare your stock and dry fry the cumin and chilli flakes

Once tender transfer to a blender for a nice smooth creamy finish

If you prefer you can leave as is for a chunky soup or blend half so there is some texture… you decide!

The soup can then be transferred to bowls and served with warm nan breads if you aren’t avoiding gluten. I however like to have my soup with a protein of some kind and this lends itself to a nice diced chicken breast which is what I enjoyed mine with!
